Teig
Mix flour, salt and instant dry yeast in a large warm bowl (use hot water to warm the bowl and then dry it before putting the ingredients). Mix well the sugar with the water and then put the oil as well. Add this lukewarm water/oil to the dry components in the bowl. Mix with a thick wooden spoon first until the dough is more or less uniform and then nead it by hand. Put some flour on a flat surface (i.e.: kitchen top) and carry on kneading until the dough has a good consistency. If it is too sticky, add more flour to the kitchen surface until you can easily handle the dough without stickyness. Please note that is better to have bit more water and add flour than the opposite.
The kneading takes roughly 10-15 minutes. Put a bit of flour in the bowl (after cleaning the bowl with warm water and drying it) and put the dough inside. Leave the dough in the bowl in a warm place away from any draft covered with a kitchen cloth for an hour (or possibly longer) to rise. You can either use the oven (before you switch it on) or put into the microwave or simply in a cupboard. Once the dough has grown, take a quarter and make a ball out of it. Put plenty flour on the kitchen surface and on the roller-pin. Roll out the dough until it has a roundish flat shape and put it carefully into an oiled pizza non-stick pan. Add a pre-cooked simple sauce with oil, onion, garlic, fresh basil or origanum and tomatoes (use small cherry tomatoes cut in half for a special sauce), grated mozzarella cheese and all the other ingredients you like on a pizza like cooked ham, mushrooms, peppers, baby marrows, etc. (rocket, salami, salmon or Parma-ham must be added after cooking in the oven). You can prepare olive oil with crushed garlic / chillie to drizzle over the pizza at the table.
N.B.: if you really like a thin base pizza, you can roll it extremely thin and manage to make up to six pizzas with the same dough quantity.
If you like it crispy, do not use too much topping, keep it light.
